Here's a recipe for avocado pasta!
1 pound whole wheat spaghetti (substitute gluten-free if needed)
2 ripe avocados, peeled and pitted
1/2 cup fresh basil leaves
2 cloves garlic, peeled
1/4 cup freshly grated Parmesan cheese
2 tablespoons lemon juice
1/4 cup extra-virgin olive oil
Salt and black pepper, to taste
Cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of the pasta water and drain the rest.
While the pasta cooks, combine the avocados, basil, garlic, Parmesan cheese, lemon juice, and olive oil in a food processor or blender. Process until smooth and creamy, adding the reserved pasta water as needed to thin the sauce.
Season the sauce with salt and black pepper to taste.
Toss the cooked pasta with the avocado sauce until well coated.
Serve immediately, garnished with additional Parmesan cheese and chopped basil if desired.
